Spring is better than meat, it's even more fragrant when braised, nutritious and high in calcium, and eaten clean off the table. Today, I'll introduce you to fragrant braised tofu. Tofu is a bean product that everyone loves, rich in nutrition, good in taste, high in calcium, and especially loved by children. I've always thought of tofu as a very magical thing, with many varieties and many ways to cook it. Different tofu has different ways to eat, such as cold mixing, frying, stir-frying, stewing, and making soup. All of these ways are delicious. Tofu also has many kinds, such as south tofu and north tofu, mainly because of different solidification methods. Today I'm making fragrant braised tofu, which uses old tofu, which is more resistant to stewing. Add some tofu that has been fried into slices, not only fixing its shape, but also increasing the egg flavor. After braising and simmering, it becomes very flavorful and goes well with rice.

Tofu Shopping Tips: 1. Look at the color: High-quality tofu is a uniform milky white or pale yellow, with a slight gloss. 2. Check the texture: High-quality tofu has complete blocks, moderate hardness, delicate texture, uniform structure, and no impurities. 3. Press with your hands: It has a certain elasticity, no yellow liquid seeps out, is not loose, and is not sticky to the hand, indicating good quality tofu. 4. Smell the aroma: High-quality tofu has the characteristic smell of tofu, such as braised tofu has the smell of braised tofu. There is no bean sprout flavor, rotten flavor, or other odors. 5. Check the packaging: Regular pre-packaged products must identify the product name, ingredients, net content, production date, shelf life, storage conditions, manufacturer address and contact information, product standard number and production license number, nutrition label, etc. If any of these are missing, it is an unqualified product. Pay attention to the production date of the product, tofu is easy to deteriorate, try to choose products with a newer production date.
