Ingredients:Chicken breast 250g Green and red bell peppers 4 each Fried peanuts 50g Scallions 2 teaspoons (10g) Ginger 1 teaspoon (5g) Garlic 1 teaspoon (5g) Sichuan peppercorns 15 pieces Dried red chili peppers 6 pieces

Seasonings:Salt 1 teaspoon (5g) Cooking wine 1/2 teaspoon (3g) Cornstarch 2 teaspoons (10g) Rice vinegar 2 tablespoons (30ml) Soy sauce 1 tablespoon (15ml) White sugar 2 teaspoons (10g) Water 2 tablespoons (30ml) Potato starch 2 tablespoons (30ml) Sesame oil 1 tablespoon (15ml)

Instructions:

1) Cut the chicken breast into 1cm cubes, add salt (1/2 teaspoon), cooking wine and cornstarch and stir evenly, marinate for 5 minutes. Cut the scallions into slightly smaller pieces than the chicken cubes. Cut the ginger and garlic into minced pieces. Cut the green and red bell peppers into pieces.

2) Put garlic, scallions and ginger into a bowl, add salt (1/2 teaspoon), white sugar, rice vinegar, soy sauce, water, potato starch to make a sauce.

3) Heat the pot, add a little sesame oil, when the oil is cold, add Sichuan peppercorns, wait for the Sichuan peppercorns to release their fragrance and darken in color, then add dried red chili peppers to sauté.

4) Add the chicken cubes and stir-fry until changed color, then add the green and red bell pepper pieces and stir-fry for 10 seconds, pour in the prepared sauce and stir-fry over high heat for 1 minute, then add the fried peanuts.
