Ingredients:
Potatoes 2, Eggs 1, Mixed vegetables 50g, Onion 20g, Bacon 40g, Thickened cornstarch 2 large spoons, Breadcrumbs as needed, Salt half a spoon, Black pepper powder a little, Vegetable oil as needed.
Method:
1. Peel the potatoes, cut them into small pieces and put them into a bowl, cover with plastic wrap, and put them in the microwave for about 5 minutes.
Tip: You can also steam the potatoes in a steamer, but the microwave is more convenient and doesn't need to add water. The moisture of the potatoes made in this way is just right and won't stick to your hands.
2. Take out the plastic wrap and mash the potatoes, let them cool slightly (be careful of the hot steam).
3. Add mixed vegetables, onion, bacon, salt and black pepper powder to the mashed potatoes and stir well.
Tip: Bacon can be replaced with minced meat, and the amount can be adjusted according to personal preference.
4. Press the mashed potatoes into small, round patties of equal size and thickness, prepare cornstarch, egg liquid and breadcrumbs.

5. First, dip the potato patties in cornstarch to coat them fully, shake off the excess.
6. Then dip them in egg liquid and coat them evenly.

8. Add a suitable amount of vegetable oil to the pot, heat to 60% and put the corn tortilla into the pot for frying.
9. Fry both sides until golden and crispy, take them out and put them on oil paper to drain the oil.
Tip: Pay attention to the heat, don't fry for too long, because the main ingredients are mostly semi-cooked and easy to cook, they are easy to overcook.
