This year I returned to my hometown on the second day of the year, and returned home at night, and haven’t left the house until now. Fortunately, I have a lot of stockpiled ingredients, and I can have a feast of big fish and big meat every meal to satisfy my family’s hunger and cravings. Because my son is growing up, I haven’t ever rushed my meals.
Red Braised Fish with Spicy Sauce
Ingredients required:
Two pounds of spicy sauce fish, appropriate amount of salt, three spoonfuls of liquor, one spoonful of beer, one root of scallion, three cloves of garlic, two spoonfuls of soy sauce, one spoonful of old soy sauce, appropriate amount of peppercorns, one star anise, two dried chilies, a small piece of ginger, two pieces of sugar
Cooking steps:
First step: Cut the fish into pieces, remove the internal organs and gills, scrape off the scales, and wash it clean and put it into a large basin, pour in three spoonfuls of liquor, appropriate amount of salt, cover with plastic film and refrigerate for a night. If you can’t do this step on the same day, because this way of cooking the fish, the fish meat is very firm and very flavorful.
Second step: Prepare all the auxiliary ingredients (peppercorns, star anise, scallion, ginger, garlic, dried chilies) Heat oil in the pot (the oil should be a little wider than stir-frying) Put in auxiliary ingredients and sauté until fragrant. Add two pieces of sugar, soy sauce, old soy sauce and sauté until fragrant. Pour in beer (I used a bottle here). Don’t use water.
Third step: After the fish is boiled, pour out the water from the comparison fish’s refrigeration, put the comparison fish into the pot one by one. Add a little salt afterwards, because the fish has been salted beforehand. Finally, reduce the sauce over high heat, sprinkle scallion flowers and cilantro before serving.
Potato Chicken Stew
Ingredients required:
One whole chicken, one large potato (two small ones), one root of scallion, one small piece of ginger, three cloves of garlic, two dried chilies, one green pepper, two spoonfuls of soy sauce, one spoonful of old soy sauce, appropriate amount of salt, appropriate amount of sugar, appropriate amount of peppercorns, star anise one, beer one bottle.

First step: Prepare all the ingredients, chop the chicken into small pieces, wash and clean it several times to remove the blood water. Cut scallion flowers, ginger slices, garlic slices, dried chili slices, potato slices, green pepper into segments and prepare them.
Second step: Heat oil in the pot, sauté sugar until amber, put the chicken pieces that have been dried in the pot and stir-fry until changed color, add scallion flowers, garlic slices, ginger slices, chili segments, peppercorns and spices, and continue to stir-fry evenly.
Third step: Add two spoonfuls of soy sauce, one spoonful of old soy sauce and continue to stir-fry until fragrant. Add potato slices and stir-fry evenly. Pour in beer to stew. Stew until the soup thickens, add appropriate amount of salt and stir-fry evenly! Add chili segments and stir-fry until lightly browned before plating and serving!
Scallion Egg Stir-Fried with Clams
Ingredients required:
