No-Bake, Fail-Proof Recipe for Red Sugar Steamed Rice Cake - Easy, Soft and Sweet


This steamed sticky rice cake is very successful, sharing it with you
Children can eat it, this recipe uses a 6-inch (qi fei mo ju –, a type of cake mold).

Ingredients

1 egg

50g rock sugar

3g yeast

160g common flour

120g warm water (about 38 degrees)

About 10 red dates

Steps

1Pour 120g of warm water (about 38 degrees) into a basin, add 3g yeast and 50g rock sugar, stir until the rock sugar has no particles, the water temperature must not be too high, or the yeast will die and not rise.

2Add melted rock sugar to the flour, (I bought the most common sifted flour in the supermarket, the kind used for making buns, steamed buns, and noodles.) You can also use low-gluten flour or high-gluten flour

3Add one egg to the flour

4Mix the flour into a smooth batter without any granules

5Pour into a 6-inch (qi fei mo ju –, a type of cake mold). I'm using a live bottom mold. If you're using a solid bottom mold, you need to brush with oil, otherwise it will be difficult to demold.

6Place it in a warm place to proof for double its size, I proof it in the oven at 30-35 degrees, about half an hour

7Peel the red dates, cut them in half

8Evenly spread the red sugar batter on the proofed batter, boil water in a steamer over high heat, steam for 30 minutes, turn off the heat and let it sit for 5 minutes. When steaming, you must make a film to prevent water from dripping down!
