Luoyang Specialties – Tofu Soup, A Bowl of Tofu Soup in Luoyang for Breakfast, Lynn Mom's Home-Made Version is Especially Fragrant
We, the people of Luoyang, have always loved drinking soup, and I especially adore tofu soup.
When I'm staying home, ‘forced by circumstances’ I learn to make tofu soup at home. My husband and children all praise my tofu soup as delicious.
Ingredients: 800g of North Tofu, 1/2 large green onion, large pieces of ginger, a handful of green vegetables, 1 small portion of sweet potato vermicelli noodles.
Method of Preparation:
- Prepare a block of North Tofu, cut it into three portions, one portion into various long strips and thin slices (for deep-fried tofu), the rest into thick slices, cook in a pot.
- Slice ginger into small pieces, then use a food processor to puree it (you can process it multiple times, the more ginger juice, the more intense the ginger flavor), then filter the ginger juice with a cloth, pour the filtered ginger juice into the soup pot.

- Bring water to a boil to blanch the tofu, removing the bean flavor from the tofu.
- Drain the water from the blanched tofu, cut the large tofu slices into oil-fried, cooled and sliced into fine strands.
- Cut the green onion into strands, half fry into scallion oil, the other half set aside.

- Wash the green vegetables and cut them into segments for preparation.
- Prepare a small bowl of flour, fry in a flat pan over low heat until golden, and add it to the final tofu soup to thicken it.
Let's start making it:
- Bring the ginger juice to a boil over high heat, then simmer for about three minutes over low heat to fully extract the ginger flavor.
- Add the tofu to the pot and cook until it's cooked through.
- Then add the soaked vermicelli noodles to the pot.
- Pour the cooked flour paste into the pot, stir to thicken the vermicelli noodles.
- Once the soup boils, add the cut green vegetable segments, turn off the heat.
Prepare the bowl ingredients:
- Place scallion flowers, fried tofu strands, scallion oil, and ginger paste in a bowl.
- Add salt, pepper, five-spice powder, to taste.
- Pour the cooked tofu soup into the bowl.
- If you like, you can also add chili oil, which is delicious!
