Boliao Small Noodles
Baoliao Small Noodles are a traditional local delicacy from Boliao, Shandong. Boliao Small Noodles developed on the basis of Fuk Shan pulled noodles. During the Republic period, the descendants of Yifug made Boliao Small Noodles, which was famous throughout the country (commonly known as ‘Yifug Small Noodles’).

Ingredients
According to 30 portions
2500 grams of fine flour (use 1500 grams), 5 grams of alkali, 10 grams of salt, 1 piece of goldfish (about 1000 grams), 1 egg, 100 grams of soy sauce, 15 grams of wood ear fungus, 5 grams of star anise, 5 grams of peppercorns, and an appropriate amount of scallion green shoots.
Starch is added in an appropriate amount, which is important for the taste of the broth and is a classic, and must not be forgotten.

Now, many restaurants also add fresh clams, oysters, etc., to increase the flavor.
Process
1. Pull Noodles: Mix flour with water to make a dough, add alkali powder, knead it evenly, and proof for 6 knocks, then immediately pour it into a boiling water pot, cook until ready and drain into 30 small bowls.
2. Make Fish Soup: Clean and cut the goldfish, make a diagonal cut on both sides; cut the wood ear fungus into pieces and wash and tear it into shreds, chop scallion green shoots into minced pieces.
3. Add water to the pot and bring to a boil, add the fish to cook, then add star anise, peppercorns, soy sauce, salt, Shaoxing wine, wood ear fungus, starch, until the fish is cooked, remove the fish, skim off the foam, remove star anise, peppercorns, cut the fish meat into diced.
