Rotten Skin Pork Roll

Ingredients:
3 sheets of tofu skin
300g tender pork
75g soy sauce
5g fine salt
1g MSG
6g white sugar
4 segments of scallion white
4 slices of ginger
50g pork broth

Instructions:
(1) Wash the pork, chop it into a fine paste, put it in a bowl, add an appropriate amount of water, and stir in fine salt, MSG and ginger to make a meat filling. Prepare a thin paste with flour and water.
(2) Lay the tofu skin on a cutting board, remove the hairy edges, put the meat filling into rough strips, and roll the sauce tofu skin from the inside out, sealing the edges with thin paste.
(3) Turn the heat on the wok, add peanut oil, heat to 70% hot, put the meat rolls in and fry until the surface becomes bright, then pour into a strainer to drain the oil.
(4) Leave a small amount of peanut oil in the wok, add fire, put scallion segments and ginger broth, simmer over low heat until the sauce thickens, then add sesame seeds, and then serve. Cut the meat roll into small pieces and arrange them neatly in a dish.
