Wrinkled Pepper Egg Stir-Fry, Mapo Tofu, and Di San Xian (Less Oil Version) Recipe

Steps for making:
1Prepare ingredients: Wrinkled pepper, eggs, garlic cloves.
2Cut minced garlic, wash the wrinkled pepper, remove the seeds, and cut into small pieces, beat eggs into a bowl with a little pepper and stir evenly.
3Heat oil in a pan, pour in the egg liquid and gently stir with a spoon.
4When the egg is solidified, scoop it out for use.
5Add a little oil to the pan, put the wrinkled pepper into the pan and stir-fry until cooked.
6Add minced garlic and stir-fry again.
7Then return the fried eggs, add a little light soy sauce and stir-fry evenly.

Production process
1First cut the silken tofu into 3-inch oblique blocks, boil in hot water for 2 minutes to remove the stone gum, drain the water.
2Heat a wok with pork oil, stir-fry beef slices and fermented bean paste together, then add chili powder, soy sauce, fermented black beans, chili oil, yellow wine, salt, and minced garlic, stir-fry until fragrant.
3Add tofu and 100ml of chicken broth, braise over low heat until a thick sauce is formed, add rice flour to thicken, add chopped green onions and flower, and season to taste.

Steps for making:
1Prepare raw materials: Cut the eggplant into diced pieces; cut the potatoes into slices; cut the green pepper into slices.
2Heat oil in a wok, add potato slices and fry until slightly golden.
3Flip and fry the potato slices until both sides are golden brown, then remove for use.
4First, salt and marinate the eggplant, then mix with a little starch and coat the eggplant surface.
5Heat oil in a wok, add the eggplant and fry.
6When the eggplant is slightly softened and the surface is golden brown, add the fried potato slices.
7Pour in a little soy sauce and braise.
8When it’s about 80% cooked, add the green pepper slices.
9Add a little salt and water starch, stir-fry until smooth.
10Pour into a serving dish, sprinkle with chopped green onions.
