One: Dry-Fried Broccoli

1Soak the broccoli in water for twenty minutes, add salt to the water, chop the broccoli into small florets.

2Cut the pork belly into thin slices, slice garlic and ginger, and cut chili peppers and green onions into segments.

3Bring a pot of boiling water to a boil, put the broccoli in to blanch for one minute and then take it out and cool it down.

4Heat a pan with a little oil, fry the pork belly over low heat.

5Fry until the oil comes out, sear both sides, add garlic and ginger to release fragrance.

6Add old dry mother, fermented bean curd, and chili sauce, stir-fry until red oil comes out, add broccoli and red peppers.

7Add fish sauce, oyster sauce, sugar and stir-fry continuously for about two minutes.

8Stir-fry for about two minutes, add green onions before serving.

Two: Fermented Bean Curd Broccoli

1Wash the broccoli and cut it into small pieces.

2Put oil in a pot, add chopped green onions, ginger, garlic, dried chili peppers, and fermented bean curd, and fry them over low heat until fragrant.

3Pour in the washed broccoli, and stir-fry over high heat.

4Add (liao jiu - rice wine), (jiang you - soy sauce), and continue stir-frying.

5Add pepper powder, chicken powder, and salt, and stir-fry evenly until cooked.

6Serve a fragrant and savory dish.

Three: Fish-Fragrant Broccoli

1Wash the broccoli and cut it into small florets, and cut fatty and lean meat into large slices.

2Cut ginger and garlic into minced pieces, and chop doubanjiang (fermented chili bean paste) into small pieces.

3Heat a pan with a little oil, and fry the meat until it’s crispy, then drain the oil.

4Add doubanjiang to the pan and stir-fry until red oil comes out, then add ginger and garlic to release fragrance.

5Add soy sauce, flower water (chili oil), and white sugar, and stir-fry.

6Add the chopped broccoli and stir-fry until it's tender and green.

7Add salt when the broccoli is almost cooked.

8Continue stir-frying until the sauce is absorbed by the broccoli, and it’s tender.

9Finally, pour in (qi zhu - cornstarch slurry) to fully coat the broccoli with the sauce, and make the color bright and vibrant.

10Drizzle in (xiang you - sesame oil), and a little vinegar, and flip to bring it out of the pan.

Four: Dry-Fried Broccoli

1Cut fatty meat and lean meat into small pieces, cut chili peppers into chunks, and chop green onion and ginger into slices.

2Tear the broccoli into small florets and blanch it in hot water, then drain it and set it aside.

3In a pan, do not use oil, and fry the fatty meat.

4Remove the oil from the fatty meat.

5Leave oil in the pan, add the lean meat and ginger slices, and quickly stir-fry to scatter.

6Add the broccoli and chili peppers and stir-fry with soy sauce, releasing fragrance.

7Add green onions, and season with salt and chicken powder, and gently stir-fry before serving.

8Serve.

Nine: Shrimp Roe Broccoli

1Cut the broccoli into small pieces, and chop garlic into slices, and peel the prawns and set them aside.

2Heat a pan with a little oil, pour in the broccoli and garlic and stir-fry.

3Add a little water and continue to stir-fry.
