Low-gluten flour 80g, 5 eggs, cornstarch 15g, white sugar 50g, milk 60g, vegetable oil 60g, a few drops of lemon juice.
Steps:
1. Separate the egg yolks and egg whites, placing them in separate containers.

2. Heat the milk to about 80 degrees Celsius (pour into a pot and heat, small bubbles will appear around the edges) and mix with vegetable oil, then add sifted low-gluten flour, add egg yolks, and stir until a smooth egg yolk paste is formed.

3. Absolutely no oil or water container, add absolutely no egg yolk egg whites, add cornstarch, use an electric beater for 30 seconds at low speed, add white sugar, increase speed to high speed until fully foamed, the volume expands, you can pull out a sharp corner without it collapsing, finally 30 seconds at low speed, this process can better ensure stability.
4. Gently fold the whipped egg whites into the egg yolk paste three times, the first two times fold in the egg whites and egg yolk paste, and finally pour the well-mixed cake batter into the egg yolk paste.

5. Preheat the rice cooker inner pot, carefully lift the cake batter and pour it into the pot, then gently tap the pot on the desktop to release the air bubbles in the cake batter.

6. Set the rice cooker to the cake program and press start. Pay attention to the cooking time, it's better to cook it through a few minutes after it's no longer soft in the middle, too short or too long will cause it to collapse. If the rice cooker does not have a cake program setting, you can use the rice cooking function. The rice cooking function will quickly stop, and continue to keep warm until it's cooked through.
7. Once the cake is cooked through, immediately take out the inner pot, tap it a few times, and invert it onto a cake base. Wait for the temperature to drop slightly, gently shake it, and a steaming, yellow, sponge-like cake will naturally complete.
Tips:
1. Use the oven's temperature control: Preheat first, then set the temperature to the lowest, 110 degrees, for 60 minutes. If the top color is not ideal, add another 10 minutes at 130 degrees.
2. When using a rice cooker, remember to cover the steam outlet with a damp cloth.
3. Use a steamer with boiling water for 40 minutes.
4. No matter which method you use, the cake container should not be too small, you need to estimate the volume of the cake as it expands. Otherwise, the cake will be too big and will be awkward if it exceeds the container!
