Shaanxi Stone Pebble Bun Recipe

Shizi mo (Stone Pebble Bun) is a very old and traditional snack from Shaanxi province. It's named after the method of baking the dough on hot stones. Because of its long history and original processing methods, it's considered a 'living fossil' in Chinese food.

Shaanxi Stone Pebble Bun Recipe Steps:
1. Use high-quality white flour, mixed with oil and salt (sugar), and some recipes include fresh flower pepper leaves, to create the dough (mo pie dough).
2. Select small, smooth grey pebbles, wash them thoroughly and dry them, then coat them with vegetable oil.
3. Place the stones in a deep, flat-bottomed pot, heat them on the fire, and constantly stir them with a spoon to ensure even heat until they're hot to the touch.
4. Place the hot stones on top of the dough and press down firmly, continuing to heat over medium heat to create a burnt, crispy texture underneath.
5. Finished: The baked shizi mo is crispy and fragrant, nutritious, easy to carry, and has a long shelf life.
