Internet Soufflé Pancakes, Easy to Make in a Skillet, Fluffy and Sweet, Very Simple Recipe

If your rice cooker cake attempt failed, try this skillet version of soufflé pancakes! They're fluffy, light, and white – super delicious!
Ingredients
30g sour yogurt, 2 eggs, 30g low-gluten flour, 20g sugar
Skillet Soufflé Pancake Recipe
- Separate egg yolks and egg whites, mix sour yogurt, low-gluten flour, and egg yolks until smooth. (If using regular flour, place it in a plate, press it down, make several holes, cover with cling film, steam for 15 minutes, cool, and knead it into a fine powder. Or add some cornstarch, high-gluten flour is for bread making.)
- Batter
- Add a few drops of lemon juice to the egg white to remove the fishy smell, add sugar (you can add it all at once) and beat until stiff peaks form
- Take one-third of the egg white and mix it with the egg yolk evenly
- Add the remaining egg white to the egg yolk mixture and mix evenly
- Heat a non-stick skillet over low heat with a small amount of oil (any flavorless oil, such as corn or soybean oil) – just a little is enough. Use a spoon to put in four portions of the batter, which can be a little higher. Pour a small amount of water into the pan – about 10ml – without pouring it on the batter.
- Cover and steam for 5 minutes
- After 5 minutes, flip and steam for 2 minutes

Dust with a little powdered milk or powdered sugar, and you can add sour yogurt and strawberry sauce – whatever you like!
