Green Pepper and Pig Skin Stir-fry

Ingredients: Fresh Pig Skin, Green Pepper, Red Pepper, Garlic, Cooking Wine, Old Chinese Soy Sauce, Light Soy Sauce, Salt, Sugar, Star Anise, Ginger Slices, Scallion Knots
Instructions:
1. Wash the pig skin clean, remove the hairs on the skin, then blanch in boiling water for 3 minutes and drain.
2. Wash and slice the green peppers and red peppers, chop garlic into minced pieces for preparation.
3. Use a knife to thoroughly clean the lard on the pig skin and cut it into wide strips.

4. Place the pig skin in water, add star anise, cooking wine, ginger slices, and scallion knots, bring to a boil over medium heat, then reduce the heat and simmer for half an hour, drain and set aside.
5. Heat oil in a wok, when the oil is hot, add minced garlic and stir-fry to fragrant, then add green and red peppers and stir-fry

7. Thicken with cornstarch slurry, add salt to taste.
