Stir-fried Shrimp with Peas, Stir-fried Black Pepper Beef, and Stir-fried Green Pepper with Shrimp


Ingredients: Duck tongue 500g, Ginger slices 6 pieces, Rice wine 1 large cup, Light soy sauce appropriate amount, Caramelized light soy sauce appropriate amount, Sugar cubes appropriate amount, Star anise 6 cloves, Sichuan peppercorns appropriate amount, Cardamom 3 pieces, Cinnamon 3 slices, Clove 6 slices, Tail oil appropriate amount, Chili appropriate amount

Procedure

1. Wash the duck tongue clean, remove the tongue scales

2. In a pot, pour in water, put in 2 ginger slices, half a cup of rice wine, boil and then put in the duck tongue, blanch for about 30 seconds and then take it out, wash it clean

3. Pour in a new pot of water again, put all the spices in, then add ginger slices, sugar cubes, bring to a boil over high heat

4. After the water boils, pour in light soy sauce, caramelized light soy sauce, tail oil, sugar cubes

5. Boil for about 10 minutes, let all the spices infuse into the water, then put the duck tongue into the pot, after the water boils, reduce the heat to a simmer for about 30 minutes, add appropriate amount of salt according to taste, and then take it out of the pot

Golden mushroom beef rolls

Ingredients: Beef slices, Enoki mushrooms, Mustard greens, Garlic and meat, Cucumber, Carrot, Green and red chili peppers, Oyster sauce, Shaojiang (Shaoxing wine), Light soy sauce, Cornstarch

Procedure

1. Peel the enoki mushrooms and cut off the roots, slice the green and red peppers into strips, mince and slice the garlic.

2. Wrap the beef slices, enoki mushrooms and green red pepper strips with beef slices.

3. Mix Shaojiang (Shaoxing wine), light soy sauce and salt and pour over the beef rolls, and let it marinate for a moment.

4. Cut the mustard greens into 5cm segments, add oil and salt, and drain them before using.

5. Heat oil in a wok, sauté minced garlic, add oyster sauce, sugar cubes, white pepper and cornstarch to make a sauce, pour it over the beef rolls.

6. Arrange cooked mustard greens on a long plate, arrange the beef rolls on top, decorate with sliced cucumbers, red chili pepper strips, and serve.

Ingredients: Green beans 300g, Beef 50g, Mustard oil 20g, Ginger 1 slice, Garlic 1 clove, Red chili pepper 1 piece, Light soy sauce appropriate amount, Sugar appropriate amount, Rice wine 5ml, Black pepper appropriate amount, Salt 5g

Procedure:

1. Wash and drain the green beans. Cut the beef into small particles and marinate with light soy sauce and black pepper for a few minutes.

2. Heat mustard oil in a pan; sauté ginger slices and garlic in the oil until fragrant; add beef particles and stir-fry until changed color.

3. Add green beans and stir-fry until slightly wilted; add light soy sauce, sugar cubes and salt, and stir-fry evenly.


4. Before serving, sprinkle red chili pepper circles and stir-fry them, then serve.

Peas with shrimp

Ingredients: Peas 500g, Shrimp 20-30 pieces, Onion 10 slices, Salt 2g+1g (marinate shrimp), White pepper 1g, Sugar 2g, Cornstarch 30ml

Procedure: 1. Rinse and blanch the peas, drain them and set aside.

2. Marinate the shrimp in 1g salt.

3. Heat oil in a pan, pour in 60% of the oil, stir-fry peas for 1 minute.
