In a family setting, when using dried silver carp, you should first soak the dried silver carp in warm water, wash it clean, drain it, and place it in a large bowl with scallions, ginger, Shaoxing wine, and a little water. Steam on the pot with a strong fire for 5 minutes, and after steaming, remove the scallions and ginger, together with the soup broth from the steamed silver carp, to combine with tofu to make a dish
Ingredients: 1 block of tofu, 100g of silver carp, shiitake mushrooms, 25g of cilantro, 15g of water-soaked wood ear mushrooms
Seasonings: 10g of scallion, 10g ginger, appropriate amounts of fine salt, chicken broth, white pepper, sugar, Shaoxing wine, cornstarch, fresh soup, fragrant oil, salad oil
Preparation
1Wash and tidy the silver carp, place it in a slightly salty water for a moment, then take it out and drain it
2Remove the old skin from the tofu, cut it into 1cm diced or cut into threads, blanch in boiling water, then take it out

3Cut the scallions into strands; peel and wash the ginger blocks, also cut into fine strands
4Remove the roots of the shiitake mushrooms, wash them clean, drain the water, and cut them into 5cm long strands
5Add water and a little fine salt to the pot and bring to a boil, add the shiitake mushroom strands to blanch for a moment, then take it out and drain it
6Wash and cut the cilantro into small segments; peel and wash the water-soaked wood ear mushrooms, cut them into strands

7Heat salad oil in a pot to 60% hot, add scallion and ginger strands to stir-fry for fragrance
8Pour in Shaoxing wine, add fresh soup and bring to a boil, then add tofu, silver carp, and cook for 5 minutes over low heat
9Add shiitake mushroom strands and wood ear mushroom strands, cook until evenly mixed, add fine salt, sugar, and chicken broth to adjust the flavor
10Thicken with cornstarch, sprinkle in cilantro segments, and drizzle with fragrant oil to complete, this dish is really delicious!
