Today I bought some shrimp meat back home to peel myself. I paired it with asparagus, the pink river shrimp meat combined with the tender green asparagus, it's beautiful in color, flavorful and with a rich texture. The recipe and seasonings are also very simple. River Shrimp with Asparagus
Main ingredients: 160g shrimp meat, 150g asparagus;
Accessories: Rice oil, (liao jiu - soy sauce), salt, white pepper, cornstarch, chicken powder, sesame oil, ginger minced;
Instructions:
1Wash the shrimp meat peeled by yourself with clean water and drain the water;

2Put the shrimp meat in a bowl, add some salt, (liao jiu - soy sauce), white pepper and cornstarch and marinate for a while;
4Use the remaining lower part of the asparagus that was eaten previously, peel off the outer skin and the old part, wash it clean with water;

5Put it into a pot and blanch it;

6Once boiling, remove it and then rinse it with cold water before cutting it into asparagus granules;

7Heat oil in a pan, sauté ginger minced;

8First put in the shrimp meat and stir-fry until it changes color and set aside;

9Leave the bottom oil in the pot, then pour in the asparagus granules and stir-fry;

10Add a little salt and (liao jiu - soy sauce) and stir-fry evenly;
11Then pour in the pre-fried shrimp meat and stir-fry evenly;

12Prepare wet cornstarch, pour it in and quickly stir-fry;

13Before serving, add a little chicken powder and sesame oil and stir-fry;

14Serve and plate immediately;
