④, Heat oil in a pan. Add a lot of oil and fry the chicken for 3 minutes. Remove. Then, when the oil temperature is higher, re-fry quickly and remove.

⑤, Heat oil in a pan. Add garlic cloves, cardamom, bay leaves, star anise, Sichuan peppercorns, red chilies, and onion to sauté and release their aroma. Quickly toss in the fried chicken and serve.
