My son often comes back from abroad, and my mother always asks: 'Son, what should we have for breakfast tomorrow?' My son will answer without hesitation: 'Egg pancake.' He's in his thirties, and whenever he returns to Yancheng, the most preferred and must-eat breakfast is always egg pancakes. He often specifies which particular egg pancakes and which egg pancake shop to go to. Although I don't eat egg pancakes, I still bring the fresh eggs from my hometown and queue up to have them made into egg pancakes.

Such a small egg pancake has such a powerful magic! I have seriously, and repeatedly, watched the entire process of making egg pancakes. Across Yancheng's alleyways and streets, around 6:30 or 7:00 pm, the stalls are all set up. Now, many have fixed stalls, but the pancakes are basically all made by local grandmothers, with a few grandfathers helping out occasionally. Generally, the stall owners are very friendly.
The stalls typically have sweet sauce, spicy sauce, flour, meat skewers, sausages, ham, and more. A basic egg pancake costs around 4 yuan (one egg, one sausage), but prices vary depending on the stall. Some stalls offer customized additions, such as eggs for processing, and deluxe versions can cost up to 15 yuan, containing eggs, scallions, spring onions, pickled radish, sauces, lettuce, meat, ribs, bacon, wheat gluten, cabbage, and more – a veritable mishmash.
It's said that a stall can make up to 100-200 pancakes a day. Someone calculated that if an egg pancake sells for 3 yuan, a daily total of 150 pancakes would generate 450 yuan, and a monthly income of 13,500 yuan. However, the people making egg pancakes work very hard, especially around schools, where they start at 4:30 am, set up at 5:30 pm, and finish around 10 am, then rest before setting up again at 4 pm and continuing until 10 pm.
