Water Boiled Beef

Ingredients: Beef, two green vegetables (spinach or similar), one sheet of Qian Zhang (dried bean curd sheets), half a lotus root, chili peppers, Sichuan peppercorns, garlic cloves, ginger, garlic leaves.

Instructions:

1. Wash the beef and slice it thinly, then place it in a bowl. Add 1 spoon of starch, 1 spoon of soy sauce, 1 spoon of rice wine, 1 small spoon of salt, 1 spoon of sugar, 1 egg white, and a little vegetable oil. Mix well and marinate for 20 minutes.

2. Peel and slice the lotus root, slice the Qian Zhang into strips, wash and chop the green vegetables into pieces, slice the chili peppers into circles, slice the ginger into threads, mince the garlic cloves, and chop the garlic leaves into segments for preparation.

3. Bring water to a boil, add the green vegetables, lotus root, and Qian Zhang separately to blanch and then remove them. Place them in the bottom of a pot.

4. Heat a pot with oil, add ginger, chili peppers, and Sichuan peppercorns to sauté until fragrant. Then add a small amount of hot pot base and stir-fry until red oil comes out. Pour in an appropriate amount of water and bring to a boil. Add the marinated beef to the pot and cook until tender, then remove it and place it on top of the vegetables.

5. Pour in the sauce, sprinkle with garlic leaves, garlic powder, chili peppers, and drizzle with hot oil.
