Cream: 150g Cornstarch: 15g Strawberry sauce

Mold size: diameter 12cm mousse ring

1. Sponge cake

Cut a sponge cake slice with a thickness of 1cm for reserve. You can also skip it and make the whole cheesecake directly.

2. Cheesecake


Soften the cream cheese in a warm environment with a cream extractor, pour in sugar and mix until smooth.



Then pour in sour cream and mix until smooth. Sour cream is made from cream and some lactic acid bacteria, so it is called sour cream (Sour cream), which is rich in fat and the nutrients needed by the human body. It is often used as a dip in Russia or Europe. If you don't have it, you can use solid sour cream instead.



Then pour in eggs, egg yolks, vanilla essence, and lemon juice and mix until smooth, then pour in cream and mix until smooth.


Pass through sifted low-gluten flour and mix thoroughly, the cheesecake is complete.

3. Mold and water bath baking


Put a piece of cake on a baking sheet, brush a layer of strawberry jam in a diameter of 12cm circle.

Put a piece of oil paper tightly against the mold inner wall, and insert it into the cake edge, forming a closed ring.


Pour the cheesecake paste through a sieve into the mold. Note: If you make a 6-inch cake, you don't need to cut it, just put a paper in it.


Put a baking pan outside, and pour 1cm deep boiling water into the baking pan, and send it to a preheated 150-degree oven to bake for 60 minutes.

Its taste is similar to sour cream cheesecake, but it has different characteristics. This strawberry cheesecake has a more intense taste because it doesn't add whipped egg whites to create a light texture, but a very rich cheese, you can taste its density and heaviness with every bite.
