Tofu is the main ingredient in Chinese vegetarian dishes, and it's affectionately known as 'plant meat'. Tofu can be produced year-round and is unaffected by seasonal changes, making it a good alternative during the off-season for vegetable production. Pan-Fried Tofu with Meatballs

Ingredients: Ground meat, tofu, black fungus, yellow squash, eggs, starch, scallions, garlic, ginger powder, five-spice powder, (rice wine), vinegar, oil, salt, and pepper.

Instructions:

1Combine the ground meat and tofu in a bowl, add the eggs, salt, ginger powder, starch, (rice wine), white pepper, and five-spice powder;

2Using gloves, break up the tofu and mix it thoroughly, then knead it vigorously;

3Squeeze out marble-sized meatballs with one hand and scoop them into balls with a spoon;

4Place in a hot oil pan;

5Fry until slightly golden; then remove;

6Reheat the pan to a large flame, and pour the fried meatballs into it, frying until golden brown;

7Prepare the dipping sauce: scallions, ginger, garlic slices, salt, vinegar, starch, and add a little water to mix well;

8Heat a pot, add black fungus and yellow squash slices, stir-fry;

9Add the fried tofu meatballs and stir-fry;

10Pour in the prepared dipping sauce;

11When each marble is evenly coated with the sauce, you can turn off the heat.


Braised Tofu

Main Ingredients: 500g Tofu

Accessories: 2 roots of scallion (garlic chives).

Seasonings: 2 tablespoons of vegetable oil, 1 teaspoon of salt, 1 tablespoon of soy sauce, 3 cloves of garlic, water starch, 1.5 tablespoons of Pixian Doubanjiang (fermented broad bean paste),

Instructions:

1Wash the scallion (garlic chives) , cut the stem and leaves into segments, and mince the garlic.

2Cut the tofu into small cubes.

3Grind the Pixian Doubanjiang finely.

4Heat a dry pot, add vegetable oil, then add Pixian Doubanjiang and stir-fry until fragrant.

5Then add minced garlic and stir-fry until fragrant.

6Pour in a little water, add soy sauce and a little salt.

7Place the tofu in the pot and cook for 3 minutes, then turn small heat and cook for 30 minutes.

8When the water is almost dry, add the scallion (garlic chives) stem and slightly par-boil.

9Pour in half a bowl of water starch and stir until smooth.

(Mapo Tofu)

Ingredients: 250g Tofu, 75g Beef

1 root of scallion (garlic chives), 15g Dried Bean Curd (Fermented Black Bean), 3g Sichuan Peppercorns, 5g (rice wine), 3g Salt, 2g MSG (monosodium glutamate), 5g Corn Starch Pea Starch, 15g Vegetable Oil, 5g Scallions (chives), etc.

Instructions:

1Cut the tofu into 2cm square blocks, put into boiling water with a little salt for 5 minutes to remove the bean flavor, then rinse with cold water.

2Sauté the dried bean curd, scallions, ginger and chili powder into small pieces.


3Heat a wok, add vegetable oil, then add the ground beef and stir-fry until golden.

4Add the dried bean curd, ginger, and chili powder and stir-fry until the beef is colored.

5Add meat broth to boil; then add the tofu and cook for 3 minutes; add soy sauce, scallion (garlic chives) segments, sugar, and season with salt, then thicken with cornstarch pea starch; Serve with chopped scallions and chives.

(Mapo Tofu)

Main Ingredients: 2 pieces of South Bean Curd (Nan Doufu), 100g Pork

Seasonings: Vegetable Oil as needed, Water Starch as needed, 1 large spoonful of Mala Sichuan Flavored Sauce, a little sugar, White Pepper a little.

Instructions:

1Prepare ingredients, place water in a pot and add 1 spoonful of salt and boil, place tofu slices in and cook for a moment, then remove.

2Heat a pot, add a little vegetable oil and stir-fry the ground pork until it turns color.


3Add Mala Sichuan Flavored Sauce and stir-fry until the fragrance comes out.

4Add a little water and use a small knife to cut the tofu into small pieces and place it in the pot to boil.

5Transfer to a small fire and cook for 30 minutes, then add a little sugar to enhance the flavor.

6Pour in a little water starch to thicken the sauce, add a little sugar to brighten it, and you can take it out.

( Soup)

Main Ingredients: 1 piece of Carpe (), 1 piece of Tofu

Seasonings: Vegetable Oil as needed, 1 teaspoon of salt, 1 teaspoon of chicken broth, 1 scallion (garlic chives), 3 slices of ginger, black pepper, 1 tablespoon of (rice wine),

Instructions:


1Cut the tofu into 1cm thick slices, dip in salt water for 5 minutes, then drain and set aside.

2Gut and scale the carp, remove the internal organs, rub with (rice wine), and season with salt for 10 minutes.

3Heat a pot with vegetable oil, sear both sides of the carp, then add scallion (garlic chives), ginger, and a little black pepper, and add water to boil for 10 minutes, then turn small heat and cook for 30 minutes.

4Then add the tofu and cook for 5 minutes, add salt and pepper, and chicken broth to season, and sprinkle with scallion (garlic chives) on top.

(Egg yolk Tofu)

Main Ingredients: 1 box of Tofu, 4 salted duck eggs.

Instructions:

1Crack 4 salted duck eggs and grind them with a spoon, as finely as possible.


2Heat in a microwave on high for 30 seconds, then take it out to cool.

3Cut the tofu into small pieces and set aside.

4Heat a little vegetable oil in a pot over low heat, sauté the ground salted duck egg until small bubbles appear in the pot, add a little water and bring to a boil.

Main Ingredients: 200g Tofu

Instructions:

1Cut mushrooms, carrots and bell peppers separately into pieces.

2Blanch the tofu in boiling water with a spoonful of salt.

3Place the blanched tofu in a stir-fry pan and pan-fry until golden brown on both sides.

4Place the fried tofu in the pan and stir-fry.

5Add the chopped mushrooms, carrots and bell peppers, stir-fry until tender.

6Add a little soy sauce, salt, chicken broth and white pepper to season.


7Finally, drizzle in a little water starch to thicken the sauce, and you can serve it.

(Fish-fragrant tofu)

Main Ingredients: 300g Tofu

Accessories: Oil, Salt, 50g Pork Ground Meat, Scallions, 2 spoonfuls of Chili Sauce, Soy Sauce, Aged Vinegar, Sugar, Water Starch, Ginger, Garlic.

Instructions:

1Cut the tofu into 2cm square blocks, and pan-fry in hot oil until golden brown on both sides.

2After frying, flip the tofu and fry until golden brown on the other side.

3Pour the fried tofu into a pan and stir-fry.

4Add chili sauce and stir-fry.

5Add minced ginger, garlic and chili powder and stir-fry until fragrant.

6Pour in a little water and bring to a boil.
