Xinjiang Big Pot Fish

Ingredients: one black fish, appropriate oil, salt, scallions, garlic, ginger, chili peppers, vinegar, liquor, peppercorns, one spoonful of Pixian doubanjiang

Procedure

1. Slice scallions, peel and mince garlic, chop chili peppers and ginger slices.

2. Place the fish in with ginger slices, season with salt, liquor, scallions, and brew for 5 hours before cooking.

3. Heat oil in a pan, add peppercorns and sauté until fragrant, then add minced garlic and scallion slices to bring out the aroma, add water, salt, and vinegar.

4. Add the fish pieces and bring to a boil, then add a spoonful of Pixian doubanjiang.

5. Add chili peppers, turn down the heat and simmer for 20 minutes.

6. Transfer to a plate and serve.

Fried Spring Rolls

Ingredients: 60g spring roll wrappers, 160g leafy greens and pork filling, appropriate oil, a little egg liquid.

Procedure

1. Mix the spring roll filling with seasonings according to your preferences. Prepare whatever you like.

2. Spread the filling on the spring roll wrappers, starting with one end, then fold both sides, and roll it up. Seal the seam with a little egg liquid.

3. Preheat the pan with appropriate oil. When the oil temperature reaches about 6-7 parts, put the spring rolls in and cook over medium heat. If you're not sure about the oil temperature, test one first.

4. Fry until both sides are golden brown, remove and place on a kitchen paper towel to drain off excess oil.

Soup Dumpling (Water Chestnut Dumpling)

Ingredients: two bundles of water chestnuts; one preserved egg; two large slices of ham; scallions; one clove of garlic; salt; appropriate water starch.

Procedure

1. Slice scallions and garlic, cut preserved egg and ham into small pieces.

2. Cut the water chestnuts in half and then into four pieces, wash them and set aside.

3. Heat oil in a pot, add scallions and garlic to sauté until fragrant, then add water chestnuts and sauté slightly.

4. Pour in hot water, bring to a boil, add preserved egg, ham, and salt, then turn down the heat and simmer for about 15 minutes, allowing the water chestnuts to soften.

5. Remove the water chestnuts, preserved egg, and ham from the pot and arrange them in a plate. Pour in the remaining soup in the pot.

6. Turn up the heat, add water starch, or chicken broth, and bring to a thicker consistency before pouring over the water chestnuts, and serve.

Winter Melon Braised Pork

Ingredients: 500g pork belly; 500g winter melon, one spoonful of light soy sauce, one spoonful of salt, 20g brown sugar, 30g red yeast rice, scallions and ginger to taste.

Procedure

1. Wash and cut the pork belly into pieces.

2. Slice scallions and ginger, cut winter melon into pieces.

3. Heat a wok without oil, place the pork belly skin down and sear until the pork fat is rendered, then add light soy sauce and stir-fry evenly.

4. Put a cloth bag and put red yeast rice in it, seal the mouth.

5. Put the pork, eight-flavor spices, scallions, ginger, and red yeast rice into the pot, pour in half a pot of boiling water, and simmer over low heat for half an hour.

6. Add brown sugar, put in winter melon, add salt, and continue to simmer for fifteen minutes before serving.
