The Season for Eating Wild Vegetables Has Arrived: Refreshing and Delicious Hui Hui Cai
I'm involved in Chinese medicine and medicinal herbs, and because of my work, I've traveled to many places across China. I originally thought that a local vegetable called 'hui hui cai' () only grew in my hometown, but I discovered it's almost everywhere in China.

'Hui hui cai' (), also known as 'wild grey lettuce', 'grey' (grey), 'wild grey lettuce'. It's commonly found in front of houses and along roadsides, in sparse vegetable fields, and in the gaps where vegetables haven't grown yet. 'Hui hui cai' is a very common vegetable. In the south, you can harvest it year-round for young seedlings and tender stems, which is delicious and tender with rich nutrition. In the north, you choose to harvest it in the warm spring and summer seasons.

The simplest way to prepare 'hui hui cai' () is to make a cold dish. After bringing it back, wash it, blanch it in boiling water, squeeze out the water, and add your favorite cold dish seasonings. Although 'hui hui cai' () is very common, be careful to identify it and don't pick it from fields that have just been sprayed with pesticides.
