Learn to Make Sweet Potato and Pork Belly - Delicious, Easy and Nutritious

Ingredients: One sweet potato, a small piece of lean pork, green onion, chili peppers, ginger, red dried peppers (hong gan jiao)
Seasonings: Star anise (), cooking wine (), aged soy sauce (), thirteen spices (), sugar (), cooking oil
1Peel the sweet potato, cut it into irregular chunks, soak it in water with white vinegar to prevent oxidation and discoloration of the sweet potato
2Cut the pork into 1cm diced, put it in a bowl with ginger slices, green onion white cut into slices, prepare two star anise, chili peppers cut diagonally into segments
3Boil water in a pot, when the water boils, pour in the pork cubes and blanch for about 1 minute, rinse with cold water and drain
4Heat oil in a pot, add green onion, ginger, star anise to release fragrance, add a few red dried peppers, add the pork cubes and start stir-frying, after fragrant, add cooking wine
5Then continue to stir-fry, add a little aged soy sauce to enhance the base color, stir-fry a few times, then add water, the water should cover the pork cubes, then cover the pot with a lid and simmer over low heat for about 5 minutes, until the soup thickens, add a few sugar (according to personal taste, I used 6 pieces)
6Continue to simmer for 1 minute, add sweet potato chunks, cover the pot and cook for about 2 minutes
7Add a little thirteen spices to enhance the flavor, then continue to reduce the soup
8When the soup thickens, you can take it out of the pot and plate it
