Beef Doesn't Need to Be Stir-Fried or Braised! Simple Boiling and Sautéing, the Flavor and Texture Triumph Over All Other Methods
Today's dry-fried shredded beef can be said to be a snack for drinking, but also a casual small snack. It has the flavors of spicy, hot, and fresh, as well as a crispy texture, and you can't stop eating it bite after bite. It's similar to beef jerky, but it's even more fragrant and crispy, and more flavorful. Some people say it's like Shadow Beef Slivers, but it has a greater sense of satisfaction when chewed, and lacks the flavor of processed composite spices.
It can be made continuously twice within a week, which shows that the family recognizes the taste very much, and it also proves that the making process is particularly simple. Such a delicious and easy-to-make dish, who wouldn't refuse it?
1 Wash the beef and soak it in clean water for 1 hour to remove the blood water.
2 Place the soaked beef in clean water and start boiling, adding (liao jiu - cooking wine), along with (cong duan - scallion segments) and (jiang pian - ginger slices).
3 Once the water boils, reduce the heat to the lowest and cook for 1 hour, then drain the water and remove the beef.
4 While the beef is still hot, use your hands to shred it into beef slices. (The thickness of the beef slices can be adjusted according to your preference – I personally prefer thin beef slices, which are especially fragrant and crispy after stir-frying, with a great texture!)
5 The beef slices are ready to be shredded in a moment.
6 In a wok, add a little more oil than usual for stir-frying, and heat the oil to the highest point before adding the shredded beef.
7 Quickly stir-fry over high heat until the beef has a jerky-like fragrance, which takes about 3 minutes – friends can adjust the time according to the thickness of the beef slices they shredded.
8 After the beef is fried, use a spatula to scoop the beef slices to the side, and then add (huajiao li - star anise seeds) to the oil to flavor and fragrant.
9 After the star anise seeds are fragrant, stir-fry with the beef slices until combined. Add (shi liao tiao - soy sauce) for seasoning and coloring.
10 Add (la jiao fan - chili powder) to taste, adding more if you like spicy flavors.
11 Add (yan - salt) and (bai tang - sugar) to taste, sprinkle a lot of (bai zhi ma - sesame seeds) and a little (ji jing - chicken broth) and stir-fry until combined before serving.
