Lotus root is most commonly processed by stir-frying, either stir-fried or diced. Lotus root itself is crisp and tender, and the taste is very sweet. After stir-frying, it is even more crisp and tender, and the taste is very good. It can be made in less than 10 minutes, a quick and easy dish.
Ingredients needed: Lotus root 300g, 20 dried red chilies, 5g garlic minced, 10 peppercorns, 1 green pepper.
Step 1: Peel and dice the lotus root, put it in a basin, soak for about 10 minutes to prevent discoloration, cut the dried red chilies into segments, wash them and remove the seeds, and cut the green pepper into small dicing.
Step 2: Pour the lotus root dices into boiling water and blanch for 2 minutes, then take it out and set it aside. Heat oil in a pan, sauté minced garlic and peppercorns until fragrant, add red chili and green pepper diced and stir-fry.
Step 3: Add the blanched lotus root dices, stir-fry for 1 minute, then add soy sauce, sugar, salt, cumin powder and adjust seasoning.
You can appropriately add a small amount of water to allow the seasonings to fully integrate. Cook over high heat until the sauce thickens, then you can take it out.

It’s great to eat hot or cold, the crispy lotus root is even better when cold, it’s spicy, sweet and crispy, challenging your taste buds. The spicy flavor combines with the slight sweetness of lotus root. If you like lotus root, you can try it.
Lotus root is slightly sweet and crisp, and has high nutritional value. Above I have mentioned the method for making spicy lotus root stir-fry. Here I will make another appetizing sweet and sour lotus root stir-fry. The sweet and sour flavor is a must-have dish for downing rice, isn’t it? The taste is sour and sweet, appetizing and downing rice, even picky children love it.
Step 1: First, when buying lotus root, you should buy lotus roots with heads, so that the sand inside will not enter the lotus root holes. Peel the lotus root and wash it clean, then cut it into uniform small pieces.
Step 2: Because lotus root will turn black when exposed to air, cut it and quickly put it into cold water to soak, add a spoonful of white vinegar to the water.

Step 3: Then heat oil in a pot, when the oil is hot, put the lotus root into the pot and stir-fry quickly until it’s 80% cooked. Add a little seasoning, add half a spoon of old Chinese liquor, three spoons of white vinegar, one spoon of salt, one spoon of sugar, one spoon of spicy, and chicken broth, and stir-fry quickly until evenly mixed.
Step 4: Finally, when almost finished, add appropriate amount of starch water, use a spatula to quickly stir-fry until thick (the ratio of starch water is one spoon of starch and half a bowl of water).

After plating, to make the taste and appearance better, we can sprinkle appropriate amount of green onion and appropriate amount of roasted sesame seeds. A delicious and beautiful, nutritious and delicious home-cooked dish is ready!
