Eggplant

Step 3: Add a little flour to the eggplant, stir it evenly with your hand, then pour a lot of oil into the pot, heat the oil to 50% (when a small bubble comes out of the chopsticks), and pour the eggplant in to fry (there are a lot of eggplants, you can fry twice). Fry until the surface is slightly yellowish, and then take it out of the pot. Note: Don't use a small fire when taking it out, or the eggplant will absorb oil again.
