First, prepare: 300g of ordinary flour, 100g of corn flour, 4g of yeast, 15g of sugar, 180ml of warm water, 200g of red adzuki beans.
Step 1: Prepare a dry and oil-free large bowl, add the ordinary flour and corn flour and mix them evenly, then add the yeast, sugar, and pour in warm water in batches while stirring, until you form a thick batter, cover with plastic wrap, and let it ferment for an hour.
Step 2: While the dough is fermenting, we'll cook some red adzuki beans. First, rinse the red adzuki beans several times with water, then put them in a pot with an appropriate amount of water, bring to a boil over high heat, then turn to medium heat and simmer until soft, when you pinch it, it will break apart, take it out and put it on a plate to cool down.
Step 3: The fermented dough batter has many air holes, use chopsticks to stir in one direction to stir and release air.
Step 4: Heat the electric griddle, brush a layer of edible oil, when the oil is hot, scoop a spoonful of batter and pour it in, gently organize it into a round shape.
Step 5: Scoop a spoonful of cooked red adzuki beans onto the steamed bun, then scoop half a spoonful of batter and pour it onto the red adzuki beans, don't pour too much, cover it completely, cover it with a lid, and cook for two minutes, open the lid, flip it over and continue to cook, flip it several times, the steamed bun will swell up, and both sides will be golden brown.
The steamed bun made this way has a crispy outer layer and a soft, sweet interior. The process is simple, watching the entire process once will be able to make it. It's easy for beginners to master. If you're interested, you can make it in the morning to share with your family. If you don't like to wake up early, you can put the batter and cool it down the day before and directly make it in the morning.
