Sisters, the yam yogurt mini-pies I'm sharing today are one of my most satisfying recipes recently! They're super soft and melt in your mouth. When I made them, I couldn't wait to pack them into a small bag to take to Tata to have with her after school – it made her so happy!

These mini-pies are also incredibly easy to make! You just mix eggs and yam together and whip them into a smooth and fluffy foam, then mix it with yogurt and flour, and pan-fry it. It's really simple!

Each small mini-pie contains a lot of nutrients. Yogurt is high in calcium and protein, beneficial for digestion and aiding digestion; yam strengthens the spleen and stomach and aids digestion, and it can also help improve immunity. Because it contains yogurt and yam, the mini-pies don't need any additional seasonings – they come out naturally sweet and with the aroma of yam!

Ever since I made these mini-pies for Tata, all other snacks have been relegated to the sidelines – she insists I make them for her!

Ingredients:

Yam 20g, Egg 1, Yogurt 20g, Medium-strength flour 17g


Instructions:

1Place yam and egg in a blender

2Start the blender and beat until the volume increases and the bubbles are abundant

The more you beat it, the longer you take, the more bubbles and the fluffier the texture will be, which is better.

3Pour in the yogurt

4Pour in the flour

5Fold until even, resulting in a smooth batter with a flowing consistency

6Squeeze the batter into a piping bag

7Heat a small flame on a non-stick pan, cut a small hole in the piping bag, and squeeze out the batter to form mini-pies

8Cover and steam until the surface of the mini-pies is dry

9Flip and pan-fry until fragrant

Soft and fluffy, melts in your mouth
