During Special Times, Foodies Transform into Chefs, Even Northeastern Classics Like ‘Hu Bing’ Are Made

What kind of craftsmanship is this? Can you make bean curd pancakes at home too?
As a Northeastern person, I haven't eaten (huo bing) for two months. I'm so craving it! There's no way to resist, so I'm making it myself at home. This is the first time Little Rabbit has made dough and rolled out pancakes. Following Rabbit Mom and Rabbit Grandma's methods, she kneaded and shaped it, and it turned out to be both chewy and full of bean flavor. It's delicious!

Ingredients:
300g flour, 160g warm water, 1 (approx. 500g) beans, 1 (approx. 500g) beef bones, 1 potato, 2 spoons of soy sauce, 2 spoons of oyster sauce, ½ spoon of five-spice powder, ½ spoon of flavor enhancer (MSG), ½ spoon of salt, chopped green onions, minced garlic, 2 star anise
Tools:
Brush, rolling pin, disposable gloves, pot, spatula

1. Pour warm water while simultaneously pouring it into the flour and stirring with chopsticks until a dough forms. Then, use your hands to knead it into a dough, take it out, and continue kneading on a cutting board until the dough is smooth and doesn't stick, put it in a basin, and cover it with plastic wrap to let it rest for 20 minutes;

2. After the dough has rested, knead it a few times to form a long rope, evenly divide it into 3 portions, slightly round it off, and then cover it with plastic wrap to let it rest for 10 minutes;


3. Roll the 3 dough portions into circular dough wrappers, brush oil on the center, stack them together, use your hands to press, and then roll into a dough wrapper that's wide enough for a pot, put it aside;




4. Boil the beef bones to remove blood (mo) (foam);

5. Heat oil in a pot, add chopped green onions, garlic, and star anise to sauté, then add beef bones and stir-fry for a few times;


6. Add the beans, stir-fry until the surface turns slightly green, then add the potato and continue to stir-fry, add soy sauce, oyster sauce, five-spice powder, MSG, and salt, stir-fry;

7. Add water until it's level with the beans, and finally, cover the dough wrapper on top, cover the pot with a lid, cook over high heat until the soup thickens, then reduce the heat and continue to simmer until the soup is completely dry.




Little Rabbit's Little Thoughts
1. Little Rabbit doesn't have ginger, and normally it's supposed to be with green onions, ginger, and garlic when cooking.
2. If you're not sure when the soup will thicken, you can open the pot lid midway through and use a spatula to check it, to avoid burning the bottom.
