Shanghai Mom Teaches You How to Make Tender and Refreshing 'Onion Chicken'

One Three Yellow chicken (1500g)
150g of green onions
30ml of chicken broth
A small amount of ginger
Appropriate amount of rice wine
Cooking Process of Onion Chicken
1. First, rinse the chicken thoroughly with clean water.
2. Slice ginger, cut scallion white into segments, cut part of green onion leaves into segments, make a small scallion knot with the remaining green onion leaves, and cut the rest of the green onion leaves into minced pieces.
3. Bring water to a boil in a pot, use both hands to hold the chicken's neck and dip it into the boiling water three times up and down.
4. Then put the chicken into the pot, add scallion knot, ginger slices and appropriate amount of rice wine.
5. Bring to a boil over high heat, simmer over low heat for about 20 minutes and then remove the chicken, immerse it in ice water for about an hour to cool, and reserve the chicken broth.
6. Heat up the pot, add appropriate amount of edible oil, first put scallion white into it until it turns yellow, then put green onion leaves into it to make onion oil.
7. Then remove scallion white and green onion leaves, leaving onion oil, and then add a small amount of chicken broth and 30ml chicken broth to boil.
8. Turn off the fire, finally pour minced green onion to stir-fry, and transfer the minced green onion and onion oil together.
9. Cut the cooled chicken into large pieces and arrange it in a dish, pour onion oil sauce on it, and enjoy! Onion chicken is complete!
