2,When processing the spinach, we must blanch it, because spinach is rich in oxalic acid. Adding salt during blanching can enhance the flavor of the spinach. Adding a little edible oil during blanching can keep the color of the blanched spinach green.

Then prepare a small bowl, beat two eggs into the bowl, and after stirring the eggs into a yolk, add a half spoonful of salt and mix it well.

3,After the spinach cools down, we need to cut it into a crumbly state, then add the chopped spinach to the egg liquid and mix it evenly. Then heat up the pan with oil, add a spoonful of edible oil to the pan, and wait for the oil temperature to reach 70% hot before pouring in the prepared egg liquid and slowly stir-fry it.

In this step, the egg liquid must be processed twice, half of the egg liquid should be fried until cooked and then added to the other half of the egg liquid and again heat up the pan, pour the other half of the egg liquid into the pan and stir-fry it again.

4,During the secondary frying, wait until the bottom is golden brown, then flip it once, and wait until the egg pancake is golden brown on both sides, and then take it out of the pan and let it cool before cutting it into small pieces.
