Fragrant Pork Rice with Bitter Melon Egg Soup: Easy, Nutritious Recipe

Every day I'm in a dilemma when feeding my two children at home, sometimes I'm frustrated because the food is either too much or not enough, and I also need to balance meat and vegetables, ensure it's nutritious and delicious, and the parents are really struggling!
Most of my lunch is rice + stir-fried vegetables + quick soup. To save time, recently I’ve been making meals in a ‘’ (covered rice) format. The kids say it’s a set meal, with meat, vegetables and soup, and they eat it very happily, and they change the dishes every day!
Sometimes I just cook by myself based on the ingredients, and sometimes the kids point at pictures online to order, like this fragrant pork rice, the two children agreed to eat it, and they finished it all, I was afraid they would eat too much!

Fragrant Pork Rice
Ingredients: 1 lb pork belly, 1 onion, 9 shiitake mushrooms, appropriate amount of quail eggs, edible oil, light soy sauce, dark soy sauce, oyster sauce, ginger, scallions, star anise, cinnamon, a small amount of sugar, appropriate amount of steamed rice;
Recipe making process:
Step 1: Prepare the ingredients, the pork should be lean, with a little fat, you can use five-spice pork belly if you like. Shiitake mushrooms can be fresh or dried, soaked to make them.
Step 2: Cut the onion into small pieces and set aside;
Step 3: Cut the pork into small pieces and set aside;
Step 4: Heat the pot over medium-high heat, add edible oil, put the chopped onion into the pot and stir-fry;
Step 5: After the onions are stir-fried, the color becomes lighter and more transparent, then add the pork pieces and stir-fry until changed color;
Step 6: Add light soy sauce, dark soy sauce, scallion ginger, oyster sauce to the pot;
Step 7: Stir-fry evenly;
Step 8: Wash the shiitake mushrooms and cut them into shiitake mushroom pieces;
Step 9: Put the shiitake mushroom pieces into the pot and stir-fry;
Step 10: Add hot water to the pot, bring to a boil, add three star anise and a small piece of cinnamon, cook together;
Step 12: Boil the quail eggs, peel them;
Step 13: Put the quail eggs into the pot with the fragrant pork rice and shiitake mushrooms, stir-fry evenly, cover the pot with a lid, simmer over low heat for about 30 minutes. It is recommended to use a thick iron pot to make it, which has a good heat retention and insulation effect, the meat will be tender and flavorful;
Step 14: After 30 minutes, open the lid, the soup becomes less, but the fragrance becomes stronger, add four to five pieces of sugar to help color and enhance the fragrance, and also to reduce the soup;
Step 15: The sugar melts, the soup thickens, and you can get it out.
Step 16: Take a small bowl and put steamed rice in it, pack it tightly and place it on a plate, then sprinkle a few grains of black sesame seeds on top, then put the fragrant pork rice and quail eggs around the rice, and on the other side put some blanched bitter melon. A fragrant pork rice meal is ready, isn’t it simple?
The kids finished it all so quickly, they really loved it! Four-year-old daughter ate a lot, and the two-year-old ate a little less, but she finished it all anyway.

Ingredients: 2 bitter melon, 1 egg, a small amount of cornstarch, appropriate amount of water, salt to taste;
