Old Mamasan Spicy Pig's Hands

Ingredients:
Raw Materials:
2 Pig's Feet, Green Onion, a little toasted sesame.
Seasonings:
100g Pixian Doubanjiang, 100g Lao Gan Ma Spicy Fermented Bean Paste, Salt, Chicken Powder, Safflower Oil, Fragrant Oil, Salad Oil to taste.
Instructions:
1. Cut the pig's feet into small pieces and blanch in a boiling pot to remove the blood water, then drain and set aside.
2. Heat salad oil in a clean wok until 70% hot, then add the pig’s feet and fry until the skin is golden brown, then transfer to a pressure cooker.
3. Heat fragrant oil in a clean wok, first stir-fry Lao Gan Ma Spicy Fermented Bean Paste and Pixian Doubanjiang, add an appropriate amount of water to boil, then add salt, chicken powder and safflower oil, take off the heat and pour into the pressure cooker containing the pig’s feet, steam for 15 minutes, then turn off the heat and steam for 5 minutes, and then take it out.
4. When plating, sprinkle with green onion and toasted sesame, and it’s done.
