Delicious Steamed Skin Noodle Recipe Sharing: Enjoy as a Main Dish or Side Dish, The Whole Family Loves It

The recipe is simpler than cold vermicelli, but the taste is no less impressive. It can be a meal or a side dish, and my daughter loves it.

Ingredients: 300g flour, 2 tablespoons of starch, a little salt, 150ml water, edible oil, scallions and chives, cooked chives, 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 teaspoon of sugar, 1/2 teaspoon of oyster sauce, a little sesame oil.

Specific steps:

1. First, make the dough. Add salt to the flour to increase the gluten, then add starch and mix well. Add water and knead into a dough. Initially, knead it into a cotton ball, then knead it into a dough. After kneading, let it rest for 20 minutes.

2. While the dough is proofing, chop the scallions and chives.

3. Add the chopped scallions to a bowl. Heat edible oil in a pot, pour over the scallions to bring out the aroma (if you like spicy food, you can add dried chili peppers). Then add soy sauce, sugar, vinegar, oyster sauce, and 2 tablespoons of hot water and mix well.


4. After the dough has proofed, knead it into long strips and divide it into equal small portions, and roll each portion into a ball.



5. After rolling each portion into small circles, brush with edible oil, stack them one on top of the other and flatten them, then roll them out thin. I stacked 6 layers. If it's difficult to operate, you can group two pieces together, roll them out, and then brush oil and stack them on top of each other.


6. Add water to the pot, place a damp cloth on it, and put the rolled dough in. Turn on high heat and bring to a boil before steaming for 8-10 minutes (similar to steaming buns).

7. After steaming, take it out, peel off each dough circle, and cut it into wide noodle strips. This type of dough circle has a lot of elasticity, and it's somewhat transparent, giving the feeling of cold vermicelli.


8. Put the sliced dough circles into a bowl, add chives, and then add the pre-prepared sauce and mix well. Of course, if you like spicy food, adding chili oil or chili sauce will be more flavorful. I'm making it for my child, so I didn't add it.


Tips

1. When making dough, add some starch, which makes the dough circles have a transparent feeling.

2. When rolling out, if it's difficult to operate, roll out two pieces of dough together, brush oil and stack them on top of each other, which will be easier.
