Mapo Tofu, Three Dishes to Fry, and Dried Plum Fish with Chili Peppers Recipes
Mapo Tofu
Ingredients: tofu, chili bean paste, ground pork, scallions, white sugar, and a bowl of hot water
Instructions:
Cut the tofu into blocks. Heat oil in a pan and fry the meat.
Add chili bean paste and stir-fry until fragrant. Add appropriate amount of white sugar, add a bowl of hot water.
Finally, add the tofu and turn over, simmer over low heat for 5-10 minutes, then collect the sauce and plate, sprinkle with chopped scallions.
Ingredients: pig liver, beef flank, duck gizzard, green peppers, red peppers, yellow peppers, scallions, ginger, garlic, fragrance oil, soy sauce, vinegar, wine, starch, salt, sugar, pepper
Instructions:
1. Cut the gizzard into pieces, add starch, wine and salt to make a slurry;

Ingredients: 300g of dried plum fish, 3 scallion, 2 teaspoons of chopped chili, 2 spoons of wine, minced garlic, minced ginger, appropriate amount of chicken powder
Instructions

add scallion and chicken powder, stir-fry evenly.
Ingredients: 2 hairy crabs, 3 fermented chili peppers, 1 garlic, 1 large piece of ginger, 1 scallion, 2g salt, 5g of soy sauce, 5g oyster sauce, 3g vinegar, 3g sugar, 2g white pepper, appropriate amount of starch, 30g of oil
Instructions:
1. Wash the hairy crabs and add salt and white pepper to marinate for 5 minutes;
2. Chop garlic, ginger, scallions and fermented chili peppers into minced pieces, to make the sauce, add soy sauce, oyster sauce, vinegar, sugar and white pepper.
3. Coat the marinated hairy crabs evenly with starch;
4. Pour oil into the pot and heat it up, put the coated hairy crabs into the pot and fry until they turn over, take them out and set aside;
5. Leave oil in the pot, add the sauce and stir-fry to release fragrance;
6. Add the hairy crabs to the pot and stir-fry evenly with the sauce;
