Waterdong Jica - A Unique Specialty of Shuidong Town, Baili County, Guangdong Province (World's Only)

Shuidong Jica (Waterdong Jica) is a specialty of Shuidong Town, Baishi County, Guangdong Province, and a national geographical indication product of China, unique throughout the country. It is exclusively grown on a few acres of red soil in Shuidong Town, known for its tender texture and lack of dross, with an incredibly fresh and fragrant flavor. It is one of the most expensive vegetables locally, while it is scarce and expensive abroad, sometimes selling for tens of yuan per kilogram. Later, other places also began to cultivate it, although its quality is slightly different from the authentic product, it still remains in high demand.

Due to its special variety and geographical climate conditions, Waterdong Jica is characterized by its crisp and delicious texture, tender and dross-free, sweet and fragrant flavor, and small production volume, making it highly sought after in the market and earning it a good reputation both domestically and internationally. It is considered a premium vegetable.
Waterdong Jica is rich in vitamins, minerals, and protein. It also contains glucosinolates, which, after hydrolysis, produce volatile pungent oils with a special spicy flavor. The protein in the vegetable breaks down into a large amount of amino acids, which, when cooked, creates a delicious aroma and excellent quality. It 'is warm in nature, spicy in flavor, can promote circulation, dispel phlegm, benefit the lungs, spleen, and stomach' and has certain health benefits.

There are many ways to prepare Waterdong Jica, which can be steamed, stir-fried, or blanched in hot water once to reduce bitterness (although some people prefer the initially bitter and then sweet taste, which can be omitted). The blanched greens should immediately be immersed in cold water to maintain their color and texture. Steaming is particularly recommended because it best preserves the original flavor; when steaming, no seasonings are needed, and after steaming, add garlic and drizzle with pure local peanut oil, which is truly delicious! It is good for eating with rice or porridge, and even three bowls won't be enough~

Have you ever tried authentic Waterdong Jica? If not, you can't be considered a true foodie.
