Stir-fried Pork: Adding One Extra Step for Tender, Juicy, and Non-Stick Meat – Super Delicious!

I don't know how many people like meat; as the saying goes, 'water without meat is not satisfying.' I enjoy adding meat when I cook. When it comes to stir-fried meat, many people ask, 'How can stir-fried meat be tender and juicy?' The key is to master some techniques.

Before stir-frying meat, the meat must be marinated. Stir-frying raw meat won't taste good. Let's first discuss the correct method and techniques. First, learn how to marinate meat. Whether you're stir-frying any kind of meat, it will be very tender and delicious. Today, I'm going to teach you how to make chili with pork.


Ingredients: Pork, green bell pepper (qingjiao), egg, starch, salt, (liao jiu – soy sauce), water, vegetable oil, onion, ginger, garlic


Instructions:

1. Cut the pork into thin slices. Place the sliced pork in a large bowl. Add a small spoonful of salt, a spoonful of (liao jiu – soy sauce), and a little water. Mix well with your hands, allowing the meat to fully absorb the moisture, making the stir-fried meat tender and juicy.

2. Then add a spoonful of (sheng chou – light soy sauce), and mix well. Add half an egg yolk and continue to stir, as the egg yolk can make the meat even more tender; after mixing well, add a spoonful of starch to lock in the moisture; finally, add a spoonful of vegetable oil and mix well to prevent sticking to the pan.

3. Wash and core the green bell pepper, then cut it into thin strips.

4. Heat a wok or pan over high heat, pour in appropriate amount of oil, stir-fry shallots, ginger, and garlic until fragrant, then add the green bell pepper and stir-fry until partially cooked, removing it from the pan to set aside.

5. Heat the oil, then add the marinated meat and stir-fry. When stir-frying, add small amounts of water, about three times. Using the steam from boiling the water, it will cook the meat, making the stir-fried meat tender.

6. Finally, add the cooked green bell pepper to the pot and mix well, and it's done!
