Traditional Dish 'Muddy Pork' - A Home-Style Recipe, Delicious and Suitable for All Ages
Muddy Pork, originally known as Wood Ear Mushroom Pork, is a common and distinctive traditional famous dish, belonging to the eighth major cuisine category of Lu cuisine – Kong Mansion cuisine. In folk sayings, it is often referred to as Muddy Pork or Alfalfa Pork. The dish is made with shredded pork and eggs, wood ear mushrooms, etc., stir-fried together. Due to the golden color of the fried eggs, it resembles wood ear mushrooms, hence the name.
Ingredients:
Pork loin, eggs, wood ear mushrooms, yellow squash, carrots, light soy sauce, salt, cooking wine, starch, chicken broth, green onions, ginger, etc.
Instructions: Cut yellow squash and carrots into rhombus shapes, blanch wood ear mushrooms until partially cooked and then remove them, slice pork loin into pieces and marinate with chicken broth, pepper, cooking wine, egg yolk, and starch for ten minutes.
Fry the egg mixture separately and set aside.
Heat up oil in a pan to 30% hot, add pork slices and quickly stir-fry until cooked, then add chopped green onions and a little light soy sauce.
Add yellow squash, carrots, and other ingredients and stir-fry briefly until slightly crisp. Add the fried egg mixture.
Add light soy sauce and an appropriate amount of salt, drizzle with fragrant oil and serve.
