Spicy Double Mushrooms
IngredientsGold needle mushrooms 200g, shiitake mushrooms 150g, a piece of scallion, ginger 1 piece, garlic 4 cloves.
Materials2 small spoonfuls of spicy hot pot base, 2 small spoonfuls of maltose, 1 small spoonful of soy sauce, a half spoonful of soy sauce, half a bowl of water, 2 small spoonfuls of edible oil.

First step, wash and slice the gold needle mushrooms, cutting off about 1 cm of the root, and then cut them in half. Wash and slice the shiitake mushrooms with a length similar to the gold needle mushrooms. Cut the scallion into chopped scallions and chopped scallion flowers, ginger and garlic into chopped ginger and garlic. (Gold needle mushrooms are difficult to chew, so cutting them into small pieces is helpful for taste and digestion.)
Second step, add 2 small spoonfuls of edible oil into the flat-bottom pan, heat over a small fire, then add 2 small spoonfuls of spicy hot pot base and stir-fry until the base color becomes dark red, which makes the spicy aroma come out. Fourth step, after the soup boils, first put the gold needle mushrooms and stir-fry until they open, cover the pot with a lid and cook for 1 minute, then put the shiitake mushrooms in and continue to stir-fry with a large fire for 3 to 5 minutes until the broth near the bottom of the pot almost dried up.
Fifth step, finally put chopped scallion and stir-fry until fragrant, turn off the fire and put the dish into a bowl, sprinkle the chopped scallion flowers on top.
