Prepare materials:
Ranch, one box.
Enoki mushrooms, one bunch.
Green chili peppers, (xia mi la - tiny chili peppers), (pao jiao - pickled peppers), Hainan yellow lantern pepper sauce.
Ginger, garlic, (liao jiu - cooking wine), white vinegar, sesame seeds, white sugar.
Method:
Slice ginger into juliennes, pound a handful of garlic and chop into garlic minced. Slice the xia mi la, green chili peppers, and pickled peppers into circles.
Boil water, place the beef slices in and blanch for one minute, then remove. Drizzle with white vinegar and set aside.
Cut the enoki mushrooms, remove the roots, and tear into small pieces. Boil in boiling water for one minute, then remove. Arrange them on the bowl.
Heat up the oil in the pan, add ginger and garlic, stir-fry until fragrant.
Add 3 tablespoons of Hainan yellow lantern pepper sauce and stir-fry.
Pour in water, add cooking wine, pickled peppers, a little salt, and white sugar. Bring to a boil.
Remove the chili residue and discard it.
Place the beef slices that have been blanched on top of the enoki mushrooms.
Pour the soup over the beef slices.
Sprinkle with green chili peppers, xia mi la, and sesame seeds. Heat one spoonful of oil and pour it over.
