Strange-Flavored Duck

Ingredients: Duck meat 500g.

Seasonings: Salad oil, green shallots, ginger, garlic, salt, white sugar, red dried chili peppers, green chili peppers, red chili peppers, MSG, peanuts, star anise, vinegar, (Pidian Doubanjiang).

Instructions:

1Cut the duck meat into small pieces and blanch in a pot of boiling water with ginger and scallions, garlic and (liao jiu - liquor), then remove.

2Heat a small amount of salad oil in a clean pot, first sauté the duck pieces, then add (Pidian Doubanjiang), ginger slices, green onion segments, and fragrant spices until fragrant and discolored, then add a broth to bring to a boil, add salt, MSG, and chicken broth for seasoning, simmer over low heat until the duck is soft and tender.

3Heat a small amount of salad oil in a clean pot, first add dried green star anise, dried chili flakes, ginger grains, and garlic cloves (crush) and sauté until fragrant, then add the duck pieces and sauté, seasoning with white sugar and vinegar during the process, and stir-fry evenly before serving.

Cantonese Steamed Shrimp

Ingredients: Live shrimp (sand shrimp) 500g, ginger 150g, green onion, coriander, (liao jiu - liquor), garlic minced, soy sauce 4 small spoons, sesame oil 1 spoon.

Instructions:

1Wash the fresh sand shrimp and use a toothpick to remove the shrimp line from the second segment of the back.

2Prepare ginger slices.

3Mince ginger, mince garlic, chop green onion and coriander into minced pieces.

4Bring a pot of water to a boil with ginger slices and 2 small spoons of (liao jiu - liquor).

5After adding the ginger slices, put the shrimp into cold water.

6About 3 minutes or so, cook the shrimp until they turn color and curl. Turn off the heat and cover the pot to steam for 1 minute.

7Mix minced garlic, ginger, green onion, and coriander in a bowl, pour in appropriate amount of soy sauce, sesame oil.

8Heat a small amount of vegetable oil in a clean pot until it just smokes. Drizzle on minced ginger, green onion, and garlic and mix evenly.

9Plate and serve. If eating alone, you can trim the shrimp whiskers. If having a friend gathering, trimming the shrimp whiskers and plating look better. Steamed shrimp with dipping sauce, truly refreshing and delicious!


Sichuan-Style Stir-Fried Squid with Green Peppers

Materials: Squid 200g, green celery 100g, red bell pepper 50g, ginger 3 slices, salt 2g, sugar 5g, lemon juice 5ml, (liao jiu - liquor) 5ml, sesame oil 5ml, spicy fermented broad bean paste 5g.

Instructions:

1Tear off the outer membrane of the squid and cut it into flower shapes, blanch in boiling water until it curls, then remove.

2Cut green celery into slices, blanch in boiling water until translucent, then cool in cold water.

3Cut red bell pepper into diamond shapes, and put it together with squid and green celery.

4Add ginger slices, salt, sugar, lemon juice, (liao jiu - liquor), sesame oil, and spicy fermented broad bean paste and mix well.
