2 Eggs, 1 Onion - Spring Recipe for Tender, Juicy Eggs
It's like tasting sweetness with bitter food, hello everyone, I'm Doudou, specializing in dark cuisine. Today I'm sharing a very delicious home-cooked dish – how to stir-fry onions. It's simple and flavorful.

Let's start making onions. Cut a whole onion in half from the middle, then cut it into chunk diced and set aside. Bell peppers are also cut into chunk diced. Pre-soaked dried wood ear mushrooms are also cut into pieces.

Slice garlic and ginger into small pieces, slice chili peppers into segments, slice pork belly into thin slices, and beat two eggs, heat up the pan with oil, wait for the oil to heat up 80% before pouring in.

Use a spoon to scoop out a suitable amount of oil, pour in the egg liquid, you can pour hot oil on top of the egg liquid, which makes the eggs fry fluffier. After frying the eggs, scoop them out and set aside. Heat the pan with oil again, and add pork belly, stir-fry over medium heat until slightly yellow. After the meat fries its oil, add ginger, garlic, and chili peppers to fry fragrant, then add onions, bell peppers, and wood ear mushrooms, stir-fry with high heat.

Fry for about 30 seconds, add soy sauce, oyster sauce and continue to stir-fry evenly, then add water to adjust the saltiness, white sugar to enhance the flavor, pour in the eggs and stir-fry over high heat to absorb the flavor, pay attention to the frying time with salt should not be too long, which can preserve the onion's crispness.
