Savor Vinegar Aroma, Relive Hometown Nostalgia: New Industrial Tourism Base Planned in Qishan, Baocai
Baocai News Network Report (by reporter Huiyao Hui)Have you ever had vinegar, but didn't know how traditional vinegar is produced? Recently, Baocai News Network reporters learned from Qishan County that Qishan Tianyuan Food Co., Ltd. is actively creating a provincial industrial tourism demonstration base. At that time, visitors can tour and experience the entire production process of Qishan vinegar under the guidance of explainers, and taste vinegar powder and vinegar beverages.

When people talk about Qishan, they will always associate it with Qishan's cuisine, such as ganmianpi (rolled dough) and saoxianmian (spotted noodle). But few know that these local delicacies are inseparable from an important seasoning – Qishan vinegar. The brewing of Qishan vinegar can be traced back to more than 3,000 years ago during the Western Zhou Dynasty. 'Zhou Li' contains records of 'Xī (xī) rén zhǎng wǔ qī, qī lǐng (zū)' – 'five qī' refers to the five processes of ancient Chinese vinegar brewing, and 'Wù yuán lèi kǎo' records 'Zhou shí yǐ yǒu cù, yī míng kǔ jiǔ, Zhou shí chēng xiè' – 'Zhou time called xie'. Qishan vinegar's main raw material is barley, brewed with dregs, and after processes such as dregs making, batter blending, and vinegar extraction, it is brewed. The resulting Qishan vinegar is pleasantly fragrant, with pure, sour taste, smooth and sour on the tongue, and long-lasting sour and fragrant taste, enhancing the flavor of various dishes, and has a unique characteristic.
Qishan Tianyuan Food Co., Ltd. has the largest high-quality vinegar research and testing center in Northwest China, with comprehensive monitoring and precise data-controlled management to ensure the high quality and safety of vinegar. The current construction of Tianyuan Handmade Workshop Industrial Tourism Point encompasses the exploration of Chinese vinegar culture, the inheritance and development of Qishan vinegar, the road of Qishan Tianyuan brand, vinegar and food, vinegar and health, the raw grains needed for Qishan vinegar, a brief introduction to the traditional farmhouse vinegar-making process, and the display of ancient vinegar containers from ancient times to the present. The tour routes include steam workshops, saccharification workshops, fermentation workshops, vinegar acidification, vinegar extraction workshops, and packaging workshops.

It is reported that the company is currently actively creating a provincial industrial tourism demonstration base, focusing on building a diversified industrial tourism zone integrating 'eat, drink, learn, and buy'. At the same time, the company will also build a supporting 1,000-mu (approximately 640 acres) cherry-picking garden outside the factory to meet the diversified tourism needs of visitors.
