Calm Fried Pork
Deep-fried pork is the most famous traditional Han Chinese dish from Shanxi Province, originating in the Ming Dynasty. Originally a famous dish in government offices, it was later passed down to the people of Taiyuan, and then gradually spread to other regions of Shanxi. It has a golden-yellow and vibrant color, a savory and slightly tangy flavor, a tender and juicy texture, with a moderate amount of transparent broth, neither thin nor thick, and a hint of refined vegetable oil.
