How to Roast Fish - Crispy, Fragrant, and Tender
Ingredients: Cod/Lotus Root/Celery/Onion/Potato/Garlic/Ginger/Soy Sauce/Shaoxing Wine/Oil/Salt/Doubanjiang/Cumin Powder/Chili Powder
Instructions:
1. Wash the fish, cut several knife evenly on its back, rub with appropriate amount of salt and massage all over.
2. Mix soy sauce, Shaoxing wine, oil, ginger slices, green onion and cumin powder in a bowl, then pour it on the fish and marinate for one hour.
3. Prepare the side dishes while marinating the fish. Cut celery into pieces, slice lotus root and potato, slice onion, preheat oven to 200℃, place onion and fish in it for 25 minutes.
4. Heat oil in a pan, stir-fry green onion, ginger and garlic, pour in the side dishes and stir-fry, add Doubanjiang, one spoonful of Sichuan Doubanjiang, one spoonful of Shaoxing wine, two spoonfuls of soy sauce, stir-fry evenly and add appropriate amount of water, cover and steam for a while.
5. Take out the roasted fish, pour the side dishes into the baking tray, sprinkle with chili powder and green onion, and continue heating.
