Emerald Shrimp Egg Custard
Main Ingredients:3 Eggs, 200ml Cold Water, Salt to taste, A few drops of White Vinegar, 8 Large Shrimp, A Handful of Green Beans, 1 Spoon of Fish Sauce.
Detailed Instructions:
First, prepare 3 room-temperature eggs and whisk them into a deep bowl, adding a few drops of white vinegar to reduce the egg's fishy smell. You can also add a few drops of cooking wine, then whisk until the egg mixture is smooth and uniform.
After mixing the egg mixture, add 200ml of cold water and continue whisking. Wait for the mixture to form small bubbles, then scoop out the bubbles with a spoon. For an even finer and more delicate custard, you can filter the egg mixture through a filter cloth, adding a little salt.
Rinse the shrimp thoroughly, drain off excess water, and marinate them in a little cooking wine for a short time, then add them to the egg mixture.
Place a piece of plastic wrap over the bowl, poking several holes with a toothpick. Alternatively, place a larger bowl on top to prevent steam from dripping in, and steam it in the steamer for 8 minutes.
Rinse the green beans and blanch them in boiling water with a pinch of salt for 2-3 minutes – adding salt will make the color of the green beans even more vibrant. Drain the green beans thoroughly.
