How Much Can Be Done in a Day: Sushi for Lunch, Coconut Chicken for Dinner, and a Hike in the Hills
This recipe is super, super simple, and the coconut chicken flavor isn't complicated, perfect for lazy chefs!

Ingredients:
Coconut, chicken, red dates, goji berries

Step 1:
Peel and clean the coconut. If you buy it at the market, ask the vendor to help you peel it. Once home, you can start making it directly.

Step 2:
Drill a hole in the coconut and pour the coconut water into the pot. I used two coconuts in this recipe, and if your pot is large, you can add a little mineral water, but the coconut:water ratio should not exceed 2:1, meaning you shouldn't add too much water.

Step 3:
The coconut meat is fragrant as it cooks! Add the 'nutritious partners' – red dates and goji berries.
Step 4:
Turn on the heat and first boil the broth. Bring to a boil, then reduce the heat to simmer for 5-10 minutes, allowing the rich coconut aroma to develop.

While the broth is simmering, use the downtime to prepare the sauce. Ginger, shallots, and green oranges are essential. Add garlic, chili peppers, soy sauce, and peanut oil to your liking. If you prefer a lighter flavor, add a little mineral water, as soy sauce can be salty.
Once the broth has boiled, add the chicken meat to cook until tender.

Step 7:
The first pot must be drunk first – it's incredibly fresh and flavorful! It's so sweet, it reaches my heart!

If the broth decreases midway, open a coconut juice. If not, use mineral water as a substitute.
Step 9:

Towards the end of the meal, blanch some green vegetables to remove excess oil. Remember to add a spoonful of soup before blanching the greens, and the soup will not taste good afterwards. At this time, you can blanch any ingredients you like, such as shrimp, beef, or enoki mushrooms – they are fantastic because they have absorbed the essence of the coconut chicken broth.
