I remember when I was a child, I loved the sticky rice my mother made in a large iron pot, it was different from pounding sticky rice; my mother's sticky rice was very simple, using glutinous rice flour and hot water and flour, fried in a pan until the skin was crispy, which could be dipped in white sugar or drizzled with red sugar syrup. It's so delicious to eat it hot, with a crispy exterior and a sweet apple kernel inside. No oil and no sugar are healthier!
Nowadays, I often make sticky rice for my family, but I always try different methods, such as today I didn't use a single drop of oil and didn't add sugar, I directly used apples to make the dough, making a sweet and refreshing apple glutinous rice pancake.
The recipe for glutinous rice pancakes is very simple, you don't need to make dough like making steamed buns, and you don't need to make oil dough like making scallion pancakes. Just scald the water and make a soft and fluffy dough. You can use a non-stick pan or a skillet. It's soft and sweet and doesn't stick to your teeth. It's ready in 10 minutes!
Apple Glutinous Rice Pancake
Main ingredients: 150g glutinous rice flour, 80g apple, 105g hot water, and a little sesame.
Specific instructions
1. Prepare 150g glutinous rice flour, 80g sesame and one apple. Glutinous rice flour is also called (Jiang Mi Mian), which you can find in supermarkets and markets.
2. Peel and dice the apple, then pour it into the glutinous rice flour, first mix it with a chopstick so that the apple pieces are evenly coated with glutinous rice flour.
3. Then add hot water and knead into a relatively soft and fluffy dough. Don't knead it too much, just make a ball.
4. Divide the kneaded dough into small pieces, individually roll them into balls, and cover them with plastic wrap.
5. Sprinkle sesame on the cutting board, then wrap each small dough with a layer of sesame and flatten it.
6. Preheat the non-stick pan, put the glutinous rice pancake in and cover it with a lid to bake.
7. Bake one side for 2 minutes, then flip it over and continue baking until the glutinous rice pancake expands and puffs up, indicating that it's cooked.
This delicious glutinous rice pancake is ready! Eat it while hot, with a crispy exterior and a sweet apple kernel inside. No oil and no sugar are healthier, and it's out of the pan in 5 pieces for the children to eat. We can also use steamed pumpkin puree, sweet potato puree, or purple sweet potato puree to make the dough, and the resulting glutinous rice pancakes are also delicious!
Tips
1. Don't wrap the kneaded dough with plastic wrap immediately, use it when it's not wrapped to prevent moisture loss and drying out.
2. Apple pieces contain moisture, so don't knead them hard, just make a ball.
3. When baking, leave some space between the pancakes, as they will expand when baking, and if they are too close, they will stick together.
4. Although glutinous rice pancakes are delicious, they are not suitable for eating at night, which is not conducive to digestion.
